Chicken Fricassee with Spinach

Zutaten

400-500 gr chicken breast

2 tablespoon olive oil or coconut oil

1 onion

1 clove of garlic

2 tablespoons all-purpose flour

100 gr white wine (optional)

300 gr water

500 gr spinach

200 gr champignon mushrooms or another type that you like (optional)

2 spring onions

½ a bunch of dill

zest and juice of 1 lemon

40-50 gr mustard

Place a deep non-stick frying pan (wok) over high heat.

Season the chicken with 1 tablespoon of oil, salt and pepper.

Cut the chicken in 3-4 cm pieces and add them to the hot wok until they become golden.

Finely slice the onion and the garlic and quarter the mushrooms.

Remove the chicken and leave it aside.

Add in the wok 1 tablespoon oil. Add the onion, garlic and mushrooms and sauté for a couple of minutes.

In the meantime, finely chop the spring onions and dill.

Add the flour and stir.

Pour the wine and wait for the alcohol to evaporate.

Add the chicken, water, spinach, spring onions and half of the dill.

Cover with the lid and simmer over low heat for 15 minutes.

Then, in a bowl, add the zest and juice of a lemon, mustard, the remaining dill and mix until the mixture is fully blended.

Using a cooking spoon, add 2-3 spoonfuls of the wok sauce, add it in the bowl with the other ingredients and then add all the mixture in the wok.

Remove from heat and add salt and pepper.
