Turkey Fillet with Christmas Stuffing

Ingredients

For 5 Portions :

3 cloves of garlic

10 g thyme

1 cupfinely chopped parsley

10 g rosemary

50 golive oil

1 tablespoon mustard

5 barley rusks (small, crumbled)

1 red pepper

1 green pepper

100 ml white wine

100ml water

Pepper, salt

40 g honey

1 kilo turkey fillet

1 hour & 25 minutes
Execution Method

Preheat the oven at 200oC set to fan

Add salt, pepper, and place 4 pieces of kitchen twine onto your working surface

Place the fillet over them and carve the turkey fillet to create a pocket for the stuffing, taking care not to cut it in half

In a bowl, add the finely chopped spices with the garlic,olive oil, mustard and the barley rusks

Then add the green and red peppers, sliced

Add the stuffing and seal the fillet

Wrap it and tie it well with the kitchen twine

Spread theolive oil, add the honey and pour the wine and water

Bake for 40 minutes at 200oC covered with aluminum foil

Once baked, remove the aluminum foil and leave it in the oven for a while until golden in color (carefully to avoid drying it out)
