Grilled Pork Tenderloin Wrapped in Arabic Pita Bread with Mustard and Vegetables

Ingredients

500 g tenderloin cut in cubes

4 large Arabic whole grain pita breads

3 tablespoons olive oil

2 tablespoons lemon juice

1 tablespoon mustard

1 teaspoon sweet paprika

1 tablespoon soy sauce

4 skewer sticks 

12 cherry tomatoes

1 medium onion

1 carrot grated

1 teaspoon dry crushed oregano

1 tablespoon balsamic vinegar

Salt

Pepper

50g mustard or 4ALL NUTRITION MAYONNAISE SAUCE

or 4ALL NUTRITION TOMATO BASIL SAUCE

Execution Method

For the marinade In a bowl, mix 1 tablespoon olive oil with the lemon juice, 1 tablespoon mustard, sweet paprika and soy sauce Add the tenderloin in the same bowl and mix well to coat completely with the marinade Cover with plastic wrap and refrigerate for 2 hours to be marinated For the sauce In a different bowl mix the cherry tomatoes, onion, carrot, oregano, vinegar, 2 tablespoons olive oil, salt and pepper; allow to rest for 1 hour to be marinated For the skewers Preheat the oven at 200°C, fan mode thread the meat on the skewers Place baking paper in a tray and place the tenderloin in the baking tray; bake for 8 minutes on one side Flip and bake for another 8 minutes Check that the meat is baked; if not leave in the oven until ready To serve Warm up the Arabic pita breads Remove the tenderloin from the skewers and add some meat in each pitta bread together with the vegetable mixture; then add your favorite sauce (mustard or 4ALL NUTRITION MAYONNAISE SAUCE or 4ALL NUTRITION TOMATO BASIL SAUCE) You can also add any vegetables you like Wrap and serve
