Vegan salad with oatmeal, walnuts and pomegranate

Ingredients

250g oatmeal

1 roasted eggplant

4 small zucchini

2 yellow peppers

3 carrots

1 spring onion, finely chopped

1/2 bunch of parsley, chopped

a few rocket leaves

10g walnuts

1 orange

1/2 pomegranate in seeds

1 tbsp. Oil

Execution Method

Cut the vegetables into strips and bake them in a greased pan in the oven until golden brown, about 40 minutes. Then chop them finely.

At the same time prepare the oatmeal, add about 1 Lt of hot water and let it soak and swell for about 1 hour. Drain well.

Mix the grilled vegetables, oatmeal, onion, parsley, arugula, walnuts, orange and pomegranate.

Add salt and pepper, oil according to your preferences and serve!
