Chicken Guacamole Roll-Ups

Ingredients

4 boneless skinless chicken breasts (680 g)

1 ripe avocado

¼ cup finely chopped tomato

2 tablespoon finely chopped onion

3 teaspoonlime juice

1 teaspoonsalt

2 eggs

1 cup breadcrumbs

½ teaspoongarlic powder

¼ teaspoonblack pepper

¼ teaspooncumin

¼ teaspoonchili powder

Execution Method

Preheat the oven at 200°C Remove the peel and seeds from the avocado, place it in a bowl and mash with a fork Add in the bowl the onion, tomato, lime juice and 1/2 teaspoonsalt and mix well to combine all the ingredients Wrap the chicken breasts and secure with toothpicks Beat the eggs in a bowl In another bowl, add the breadcrumbs, lime zest, garlic powder, chili powder, cumin, 1/2 teaspoon salt and pepper and mix thoroughly Add the chicken in the bowl with the eggs Roll the chicken in the breadcrumb mixture and place each chicken breast in the baking tray Bake for 30 minutes or until your chicken is well cooked with crispy coating
